These are some more of the cookies we make for Christmas each year.
Gingerbread Men ~
This is another of our favourite Christmas cookie recipe's we multiply this by at least 4 times
750 grams plain flour
500 grams sugar
7tsp baking powder
1tsp cinnamon
1tsp cloves
1tbsp ginger
1/2tsp cardamon
125 grams butter
1/2 cup honey
2 large eggs
lemon juice
1/ Combine dry ingredients
2/ Melt butter , mix in eggs, honey and lemon
3/ Combine the dry ingredients
4/ Mix and kneed. If it is too dry add extra lemon or egg. ( I have added both and it makes no difference to the dough)
5/ divide into 2 lot sand roll and cut into shapes.
6/ Cook for approx 15 mins at 180 degrees
Shortbread ~
7 ounces soft butter
3 ounces icing sugar
9 ounces plain flour
2 ounces corn flour
1/ Beat butter and icing sugar to a cream
2/ add flour and corn flour and continue beating
Sift if you want but I never have and it always turns out.
3/ Squash down into greased lamington trays
4/ sprinkle sugar on top
5/ bake at 200 degrees for 20-25 mins
6/ Cut into squares as soon as cooked in the tray
